eskimo. Why? 1. because I always wanted to check that box on standardized tests and college applications. 2. its the only race I can think of that doesn't have a history of persecuting or being persecuted for hundreds or thousands of years. I admit I don't know much about eskimos, but I imagine that the worst part about being an eskimo is that everyone would always ask you to recite all 250 words for snow. If thats the worst, I think I could handle it.
oh and 3. I like eskimo kisses.

chinese, because they love to eat and have large close knit families just like the italians and samoans do...so it would be the least stressful change for me
Not-Jewish of course!
Something latin, not mexican though.
